Ingredients

2 pounds baby Yukon Gold potatoes, halved

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon dried rosemary

1 teaspoon paprika

1 tablespoon fresh parsley, chopped


Instructions

1. Preheat the oven to 425°F and lightly grease or line a large baking sheet.

2. Wash and halve the potatoes so they are close in size for even roasting.

3. Place the potatoes in a large bowl and toss with olive oil, garlic powder, salt, black pepper, dried rosemary, and paprika until evenly coated.

4. Spread the potatoes cut-side down in a single layer on the prepared baking sheet.

5. Roast for 35 to 40 minutes, flipping once halfway through, until the potatoes are golden brown and tender inside.

6. Remove from the oven, sprinkle with fresh parsley, and serve hot.

Notes

For extra crisp edges, make sure the potatoes are spread out and not crowded on the pan.
