What I love most is how dependable they are. Whether I am putting together a quick weeknight dinner, a casual brunch spread, or a holiday table with a few extra dishes, these roasted red potatoes always fit right in. They are hearty, easy to season, and they taste like comfort with almost no fuss.

Why Are Simple Roasted Red Potatoes So Good?

Red potatoes are one of my favorite choices for roasting because they hold their shape well while still getting tender inside. Their thin skins help them crisp up in the oven, and they have a naturally creamy texture that makes them taste rich even with a short ingredient list.

I also love how flexible this dish is. I can keep it simple with garlic and dried herbs, or finish it with fresh parsley and a little extra black pepper for a brighter, more polished look. It is one of those recipes that feels homemade in the best possible way.

Ingredients for the Simple Roasted Red Potatoes

Red potatoes

These are the star of the dish. I like using small red potatoes because they roast evenly, look beautiful on the serving platter, and give me that creamy interior with lightly crisped edges.

Olive oil

Olive oil helps the potatoes brown and roast instead of dry out. It also carries the seasonings so every piece gets coated evenly.

Garlic powder

Garlic powder adds savory depth without the risk of fresh garlic burning in the oven. It gives the potatoes that classic roasted flavor I always want.

Dried parsley

This brings a gentle herbal note that makes the potatoes feel more complete. It blends well with the garlic and keeps the seasoning simple.

Dried thyme

A little thyme gives the potatoes warmth and an earthy flavor that works especially well with roasted dishes.

Salt

Salt wakes everything up. It pulls out the natural flavor of the potatoes and makes every bite taste balanced instead of flat.

Black pepper

Black pepper adds a mild kick and rounds out the seasoning.

Fresh parsley

I like to finish the potatoes with chopped fresh parsley for color and a little freshness right before serving.

How To Make the Simple Roasted Red Potatoes

Step 1: Prep the potatoes

I start by washing the red potatoes well and cutting them in halves or quarters, depending on their size. I want the pieces to be close in size so they roast evenly.

Step 2: Season everything well

I place the potatoes in a large bowl and toss them with olive oil, garlic powder, dried parsley, dried thyme, salt, and black pepper. I make sure every piece is well coated so the flavor reaches every bite.

Step 3: Arrange for better roasting

I spread the potatoes on a baking sheet or roasting dish in a single layer. I try not to overcrowd them because space helps them brown instead of steam.

Step 4: Roast until golden and tender

I roast them in a hot oven until the cut sides are golden and the centers are tender when pierced with a fork. About halfway through, I give them a turn so they color more evenly.

Step 5: Finish and serve

Once they come out of the oven, I scatter fresh parsley over the top and serve them while they are hot. That is when the edges are at their crispiest and the insides are at their fluffiest.

Serving and Storing Simple Roasted Red Potatoes

I usually serve these potatoes straight from the oven because that is when they are at their absolute best. The edges stay lightly crisp, the centers stay soft, and the herbs smell amazing. They work with breakfast, lunch, or dinner, which is one of the reasons I make them so often.

If I have leftovers, I let them cool and store them in an airtight container in the fridge for up to 4 days. To reheat, I prefer using the oven or air fryer so the edges crisp back up. The microwave works too, but the texture will be softer.

What to Serve With Simple Roasted Red Potatoes?

Roast chicken

A juicy roast chicken and these potatoes are one of my favorite classic combinations. The potatoes soak up all those savory flavors beautifully.

Grilled steak

When I want a hearty dinner, I pair these potatoes with grilled steak. The crispy edges and creamy centers are perfect next to a rich main dish.

Baked salmon

Roasted red potatoes go really well with salmon, especially when I add lemon or dill to the meal.

Fried or scrambled eggs

I love serving them with eggs for breakfast or brunch. They make the plate feel extra satisfying without much extra work.

Garlic butter shrimp

If I want something quick but flavorful, shrimp and roasted potatoes are an easy match that feels a little special.

Meatloaf

These potatoes are a great side for meatloaf because they bring texture and a simple savory flavor that does not compete with the main dish.

Green beans or a salad

For balance, I often add a green vegetable on the side. A crisp salad or tender green beans round out the plate nicely.
