Description

Simple Roasted Red Potatoes are the kind of easy side dish that can save dinner in the best way. Crispy on the outside, fluffy in the middle, and coated with garlic, herbs, and olive oil, they fit right in with everything from a quick breakfast to an easy dinner. This simple potato recipe is one of my favorite food ideas when I need a healthy snack-style side, dependable dinner ideas, or an easy recipe that always turns out golden, comforting, and full of flavor.


Ingredients

1 1/2 pounds red potatoes

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried parsley

1/2 teaspoon dried thyme

3/4 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon fresh parsley


Instructions

1. Preheat the oven to 425°F.

2. Wash and dry the red potatoes, then cut them into halves or quarters so the pieces are close in size.

3. Place the potatoes in a large mixing bowl.

4. Add the olive oil, garlic powder, dried parsley, dried thyme, salt, and black pepper.

5. Toss well until all the potatoes are evenly coated.

6. Spread the potatoes in a single layer on a baking sheet or roasting dish, cut side down where possible.

7. Roast for 30 to 35 minutes, turning once halfway through, until the potatoes are golden brown and fork tender.

8. Remove from the oven and sprinkle with fresh parsley.

9. Serve hot.

Notes

For better browning, do not overcrowd the pan. Give the potatoes space so they roast instead of steam.

Cut the potatoes into similar sizes so they cook evenly and finish at the same time.
