Ingredients

2 chicken breasts, cut into bite-sized chunks

8 oz Andouille or smoked sausage, sliced into rounds

2 cups rotini or your favorite pasta

2 tbsp olive oil

1 tbsp Cajun seasoning (plus more to taste)

1/2 tsp paprika

1/2 tsp garlic powder

1/2 onion, diced

3 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and black pepper to taste

Chopped parsley for garnish


Instructions

  1. Season chicken with Cajun seasoning, paprika, garlic powder, salt, and pepper.
  2. Heat 1 tbsp olive oil in a skillet over medium-high heat. Add chicken and cook until golden and cooked through. Set aside.
  3. Add remaining oil to the same skillet and cook the sausage slices until browned. Remove and set aside.
  4. Add onion to the skillet and cook until translucent. Stir in garlic and sauté for 30 seconds.
  5. Deglaze the skillet with chicken broth. Let it simmer, then stir in the cream and let it cook for 3–4 minutes.
  6. Meanwhile, cook the pasta according to the package directions. Reserve 1/4 cup of the pasta water before draining.
  7. Add cooked pasta, chicken, and sausage to the sauce. Stir in Parmesan and mix well. Add pasta water if needed to thin sauce.
  8. Garnish with chopped parsley and extra Cajun seasoning if desired. Serve hot.
