Ingredients

2 boneless skinless chicken breasts

1 cup black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 can (14.5 oz) fire-roasted diced tomatoes

1 can (4 oz) diced green chilies

1 small yellow onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

4 cups chicken broth

1/4 cup fresh cilantro, chopped

1 cup crispy tortilla strips (for topping)


Instructions

1. Add onion, garlic, black beans, corn, diced tomatoes with juice, and green chilies to the slow cooker. Sprinkle in cumin and chili powder.

2. Place chicken breasts on top of the mixture. Pour chicken broth over everything.

3. Cover and cook on low for 6-7 hours or high for 3-4 hours.

4. Remove the chicken, shred with forks, and return to the slow cooker. Stir in chopped cilantro.
