Ingredients

1 tablespoon olive oil

1 small yellow onion, chopped

3 cloves garlic, minced

3 carrots, peeled and chopped

3 celery stalks, chopped

1 (14.5 oz) can diced tomatoes, drained

4 cups low-sodium vegetable or chicken broth

1 teaspoon dried basil

1 teaspoon Italian seasoning

½ teaspoon crushed red pepper flakes (optional)

Salt and black pepper to taste

1 (20 oz) package refrigerated cheese tortellini

1 cup heavy cream

½ cup grated Parmesan cheese

2 cups fresh baby spinach

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a skillet and sauté onion, garlic, carrots, and celery until softened.
  2. Transfer veggies to a slow cooker and add tomatoes, broth, herbs, and seasoning.
  3. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  4. Stir in tortellini, heavy cream, and Parmesan; cook on HIGH for another 30 minutes.
  5. Add spinach just before serving. Garnish with parsley and serve hot.
