Ingredients

2 pounds boneless skinless chicken thighs

1/2 cup honey

1/3 cup low sodium soy sauce

1/4 cup ketchup

4 cloves garlic, minced

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 tablespoons cornstarch

2 tablespoons water

2 green onions, thinly sliced

1 teaspoon sesame seeds

3 cups cooked jasmine rice


Instructions

1. In a medium bowl, whisk together the honey, soy sauce, ketchup, minced garlic, rice vinegar, and sesame oil until smooth.

2. Place the chicken thighs in the slow cooker in an even layer.

3. Pour the sauce over the chicken and turn the pieces to coat well.

4. Cover and cook on low for 5 to 6 hours or on high for 2 1/2 to 3 1/2 hours, until the chicken is tender and fully cooked.

5. Remove the lid. In a small bowl, stir together the cornstarch and water. Add the slurry to the slow cooker and stir gently into the sauce.

6. Cook for 15 to 20 minutes more, until the sauce thickens into a glossy glaze.

7. Serve the chicken over cooked jasmine rice and finish with green onions and sesame seeds.

Notes

Use chicken thighs for the juiciest texture since they hold up better than chicken breasts during long slow cooking.

For a thicker sauce, leave the lid off during the final 15 to 20 minutes after adding the cornstarch slurry.
