Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
24 oz cream cheese, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/2 cup heavy cream
1 1/2 cups chopped Snickers bars
3/4 cup salted caramel sauce (plus extra for topping)
1/3 cup chopped peanuts (optional, for topping)
Instructions
1. Preheat oven to 325°F (163°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.
2. In a bowl, mix graham cracker crumbs with melted butter until well combined. Press into the bottom of the pan to form a firm crust. Bake for 10 minutes and set aside to cool.
3. Beat cream cheese and sugar together until smooth and creamy.
4. Add eggs one at a time, beating on low speed after each just until blended. Stir in vanilla and heavy cream.
5. Gently fold in chopped Snickers bars. Pour filling over the prepared crust.
6. Wrap the bottom of the springform pan in foil and place it into a larger baking dish. Fill with 1 inch of hot water to create a water bath.
7. Bake for 55–65 minutes, until center is set but still slightly jiggly. Turn off the oven, crack the door open, and let cheesecake cool for 1 hour.
8. Remove from oven, chill in fridge for at least 4 hours or overnight.
9. Once fully chilled, remove from pan and drizzle salted caramel sauce on top. Garnish with more chopped Snickers and peanuts.
10. Slice with a hot knife and serve slightly chilled.
