1 cup (2 sticks) unsalted butter, softened
1/2 cup powdered sugar (plus more for rolling)
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans or walnuts
Instructions
- In a large mixing bowl, cream the butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Gradually add in the flour and salt. Stir until combined.
- Fold in the chopped nuts.
- Cover the dough and refrigerate for at least 30 minutes.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll dough into 1-inch balls and place on the baking sheet.
- Bake for 12–15 minutes or until the bottoms are lightly golden.
- Cool for 5 minutes, then roll warm cookies in powdered sugar.
- Once cooled, roll them again for the final powdery finish.
