Ingredients

1 cup yellow cornmeal

½ cup all-purpose flour

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 tablespoon sugar (optional)

¾ cup buttermilk

2 tablespoons honey

1 large egg

4 tablespoons unsalted butter, melted

½ cup sweet corn kernels (fresh, canned, or frozen)

Optional: ½ cup shredded cheddar or diced jalapeños

Oil for frying or cooking spray for baking


Instructions

  1. In a large bowl, mix cornmeal, flour, baking powder, baking soda, salt, and sugar.
  2. In another bowl, whisk buttermilk, honey, egg, and melted butter.
  3. Combine wet and dry ingredients just until mixed. Fold in corn kernels and any optional add-ins.
  4. Scoop batter into small balls using a cookie scoop or spoon.
  5. To Fry: Heat oil to 350°F and fry in batches for 3–4 minutes until golden brown. Drain on paper towels.
  6. To Bake: Preheat oven to 400°F, place poppers on greased sheet or mini muffin tin, spray tops with oil, and bake for 10–12 minutes.
  7. Melt 2 tbsp butter with 1 tbsp honey and brush over warm poppers for a glossy, sweet finish.
