Ingredients
1 large spaghetti squash (about 3–4 lbs)
1 tablespoon olive oil
Salt and pepper to taste
1/2 onion, finely chopped
2 garlic cloves, minced
1 lb ground turkey or beef (optional)
1 ½ cups marinara sauce
1 teaspoon Italian seasoning
1 cup ricotta or cottage cheese (optional)
1 ½ cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese
2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 400°F (200°C).
- Cut spaghetti squash in half lengthwise, remove seeds, and brush with olive oil. Season with salt and pepper.
- Roast cut-side down for 35–40 minutes until tender. Let cool and shred into strands.
- While roasting, sauté onion in olive oil for 2–3 minutes. Add garlic and cook for 30 seconds.
- Add ground meat if using, cook until browned, and season with Italian seasoning.
- Stir in marinara sauce and simmer for 5 minutes. Add ricotta or cottage cheese if desired.
- Combine the spaghetti squash with the sauce mixture.
- Transfer mixture to a greased 9×13-inch baking dish.
- Top with mozzarella and Parmesan cheese.
- Bake at 375°F (190°C) for 20–25 minutes or until bubbly and golden.
