Ingredients

2 boneless skinless chicken breasts (or thighs), filleted

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

2 eggs, beaten

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup mayonnaise

2 tablespoons sriracha

1 tablespoon honey

1 teaspoon rice vinegar

2 brioche or sesame buns

1 cup shredded cabbage

1/4 cup shredded carrots

2 tablespoons chopped cilantro

2 tablespoons sliced green onions

1 teaspoon lime juice or rice vinegar (for slaw)

Oil for frying


Instructions

1. Marinate the chicken fillets in buttermilk, salt, and pepper for at least 30 minutes or overnight.

2. In a bowl, whisk together mayonnaise, sriracha, honey, and rice vinegar to make the Bang Bang sauce.

3. Toss the shredded cabbage, carrots, cilantro, and green onions with lime juice and a pinch of salt for the slaw.

4. Mix flour, cornstarch, paprika, garlic powder, salt, and pepper in a shallow bowl.

5. Dip the marinated chicken into the beaten eggs, then dredge in the flour mixture.

6. Heat oil in a pan and fry chicken on each side for 5-6 minutes until crispy and golden. Drain on a wire rack.

7. Toast the buns lightly.

8. Spread Bang Bang sauce on the bun, add crispy chicken, slaw, and top with more sauce. Close the sandwich and serve hot.

Notes

For an air-fried version, spray the coated chicken lightly with oil and cook at 400°F for 12–14 minutes, flipping halfway.

You can double the sauce and keep it refrigerated—it also works great as a dip for fries or veggies.
