Ingredients

2 large boneless, skinless chicken breasts (cut into bite-sized chunks)

2 tablespoons Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic, minced

1/2 teaspoon crushed red pepper flakes (optional)

1/2 cup sun-dried tomatoes, chopped

1/2 cup chicken broth

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

8 oz linguine pasta

Salt and pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Slice chicken into bite-sized chunks and toss with Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until fully cooked. Remove and set aside.
  3. In the same pan, melt butter. Add garlic, red pepper flakes, and sun-dried tomatoes. Sauté until fragrant.
  4. Pour in chicken broth and deglaze the pan. Simmer for 2–3 minutes.
  5. Add heavy cream and Parmesan, stirring until smooth.
  6. Cook linguine according to package instructions. Drain, reserving 1/4 cup pasta water.
  7. Combine pasta and chicken in the skillet with the sauce. Toss well, adding pasta water as needed.
  8. Garnish with fresh parsley and serve hot.
