Ingredients

1 lb lean ground beef

1 cup cooked white rice

1 cup broccoli florets

1 medium zucchini sliced

1 red bell pepper sliced

1 cup mushrooms sliced

2 tablespoons soy sauce

2 cloves garlic minced

1 teaspoon chili flakes

1 teaspoon sesame oil

Instructions

1. Heat a skillet over medium-high heat and add the ground beef. Cook until browned, breaking it up as it cooks. Drain any excess grease.

2. Add minced garlic, soy sauce, and chili flakes to the beef. Stir and let it simmer for 3-4 minutes.

3. In a separate skillet, heat sesame oil over medium-high heat. Add broccoli, zucchini, mushrooms, and red bell pepper. Stir-fry until vegetables are tender-crisp, about 5-7 minutes.

4. Season the vegetables with a splash of soy sauce and a little garlic for extra flavor.

5. In serving bowls, add a portion of cooked rice. Top with the spicy beef and stir-fried vegetables.

6. Garnish with sesame seeds or a drizzle of chili oil, if desired. Serve hot.

Notes

You can substitute ground turkey or plant-based crumbles for a lighter version.

Store leftovers in airtight containers for up to 4 days; great for meal prep.
