Ingredients
2 salmon fillets
2 cups fresh spinach
1 tablespoon olive oil
1 clove garlic, minced
1⁄3 cup crumbled feta cheese
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper
1⁄4 teaspoon paprika (optional)
Instructions
1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Slice a pocket into each salmon fillet horizontally without cutting through.
3. In a skillet, heat olive oil over medium heat and sauté garlic for 30 seconds.
4. Add spinach and cook until wilted, about 2 minutes.
5. Remove from heat and mix in crumbled feta.
6. Stuff salmon pockets with the spinach-feta mixture.
7. Season the salmon with salt, pepper, and paprika.
8. Place on the prepared baking sheet and brush tops with olive oil.
9. Bake for 12–15 minutes or until salmon is flaky and opaque.
