Description

Spooky BOO-schetta is the kind of Halloween appetizer that makes people smile before they even take a bite. Crisp toasted baguette slices are topped with juicy tomatoes, garlic, basil, creamy cheese, and cute little ghost faces for a fun party snack that feels both festive and fresh. It is an easy recipe for entertaining, a creative appetizer for Halloween night, and one of those food ideas that works for quick snacks, party platters, holiday appetizers, and simple make ahead hosting.


Ingredients

1 baguette, sliced

2 cups cherry tomatoes, halved

2 cloves garlic, minced

2 tablespoons fresh basil, chopped

2 tablespoons olive oil, plus more for brushing bread

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup balsamic glaze

1 cup ricotta cheese

1/2 cup mini mozzarella balls, chopped or whole

2 black olives, sliced into small pieces for faces


Instructions

1. Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil.

2. Toast the bread for 8 to 10 minutes, until golden and crisp around the edges.

3. In a bowl, combine the cherry tomatoes, garlic, basil, olive oil, salt, and black pepper. Stir well and let the mixture sit for 10 minutes.

4. Stir the ricotta until smooth. If desired, mix in a little chopped mozzarella or place one mozzarella ball on each toast before adding the ricotta.

5. Spoon the tomato mixture over each toasted baguette slice, leaving behind excess liquid so the bread stays crisp.

6. Add a spoonful of ricotta on top of each toast and shape it into a ghost with the back of the spoon.

7. Press tiny olive pieces into the ricotta to make the ghost eyes and mouth.

8. Drizzle lightly with balsamic glaze and garnish with extra basil before serving.

Notes

Assemble the ghost topping just before serving so the bread stays crisp.

Use ripe, firm cherry tomatoes so the topping stays juicy without becoming watery.
