Ingredients
1 lb chicken thighs or breasts
2 tablespoons light soy sauce
1 tablespoon dark soy sauce
2 tablespoons brown sugar
4 cloves garlic, minced
1 teaspoon fresh ginger, grated (optional)
1 tablespoon cornstarch
2 tablespoons water (for slurry)
1 tablespoon sesame oil
8 oz ramen noodles or lo mein noodles
2 tablespoons oil (for cooking)
2 tablespoons chopped green onions (for garnish)
1 teaspoon sesame seeds (for garnish)
Instructions
1. Slice chicken into bite-sized pieces and season with salt and pepper.
2. Heat oil in a large skillet, add chicken, and cook until golden brown. Remove and set aside.
3. In the same pan, sauté garlic (and ginger if using) until fragrant.
4. Add light soy sauce, dark soy sauce, brown sugar, and a splash of water. Stir and simmer.
5. Mix cornstarch with water to create a slurry, and stir it into the simmering sauce.
6. Let the sauce bubble and thicken to a sticky glaze.
7. Add chicken back to the pan and toss to coat.
8. Add cooked noodles and mix well to combine everything.
9. Drizzle sesame oil and toss again before removing from heat.
10. Garnish with green onions and sesame seeds. Serve hot.
Notes
Add chili flakes or sriracha to the sauce for extra heat.
