Ingredients

1 pound ground beef

8 ounces rotini pasta

1 cup shredded cheddar cheese

4 ounces cream cheese

1 small onion, diced

3 cloves garlic, minced

2 cups beef broth

1/2 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 tablespoon chopped parsley (for garnish)


Instructions

1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat.

2. Add diced onion and minced garlic to the beef. Cook for 3-4 minutes until fragrant and soft.

3. Stir in beef broth, salt, pepper, and paprika. Bring to a gentle simmer.

4. Add uncooked pasta and stir well. Cover and cook, stirring occasionally, until pasta is al dente and liquid is mostly absorbed (about 10-12 minutes).

5. Add cream cheese and shredded cheddar. Stir until fully melted and creamy.

6. Pour in heavy cream and let it simmer uncovered for another 2-3 minutes to thicken.

7. Garnish with chopped parsley and serve hot.

Notes

Add a splash of milk or broth when reheating to bring the sauce back to life.

Swap in penne, shells, or elbow macaroni if you’re out of rotini.
