Ingredients
2 oz rotini or penne pasta
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
2 cups beef broth
1 cup heavy cream
2 cups shredded cheddar cheese
1 tbsp butter
1 tbsp all-purpose flour
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika (optional)
1/2 cup diced tomatoes (optional)
Fresh parsley for garnish
Instructions
- Cook the pasta in salted water until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
- In a large skillet, heat butter over medium heat. Add ground beef and cook until browned. Drain excess grease.
- Add diced onion and cook until soft, about 2-3 minutes. Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the beef mixture and stir to combine.
- Slowly pour in beef broth, stirring constantly. Let simmer for 2-3 minutes until slightly thickened.
- Reduce heat and stir in heavy cream. Let it cook for 2-3 more minutes.
- Add shredded cheddar cheese, stirring until melted and smooth. Season with salt, pepper, and paprika.
- Mix in cooked pasta, tossing everything together. If the sauce is too thick, add reserved pasta water.
- Remove from heat, garnish with fresh parsley, and serve warm.
