Ingredients

1 cup whole milk

2 1/4 teaspoons active dry yeast

1/4 cup granulated sugar

3 1/2 cups all-purpose flour

1 teaspoon salt

2 large eggs

1/3 cup unsalted butter, softened

1 1/2 cups fresh strawberries, diced

1 tablespoon granulated sugar (for strawberries)

1/4 cup powdered sugar (for dusting)

1/2 cup powdered sugar (for glaze, optional)

1 1/2 tablespoons milk (for glaze, optional)

1/2 teaspoon vanilla extract (for glaze, optional)

Oil for frying


Instructions

1. Warm the milk until just lukewarm. Stir in sugar and yeast. Let sit for 5–10 minutes until frothy.

2. In a large bowl, combine flour and salt. Add the yeast mixture, eggs, and softened butter. Mix until dough forms. Knead until smooth and elastic.

3. Cover and let rise in a warm place for 1 to 1.5 hours, until doubled in size.

4. Punch down dough. Roll it out on a floured surface and cut rounds with a cookie cutter or glass. Place on a tray, cover, and let rise for 30–45 minutes.

5. Heat oil in a deep pot to 350°F (175°C). Fry donut rounds in batches, flipping once, until golden brown. Drain on paper towels.

6. Toss diced strawberries with 1 tablespoon sugar and let sit 10 minutes to release juices.

7. Spoon strawberries over each donut. Dust with powdered sugar.

8. Optional: Mix glaze ingredients and drizzle over donuts.

Notes

Make sure the oil is at the right temperature for frying. Too cool and the donuts absorb oil; too hot and they burn outside while raw inside.

Fresh strawberries are best, but you can swap in thawed frozen berries in a pinch—just drain excess liquid before topping.
