4 large bell peppers
1 lb ground beef
1 cup cooked rice
1 small onion, diced
2 cloves garlic, minced

1 cup shredded mozzarella cheese

Instructions
1. Slice the tops off the bell peppers and remove seeds and membranes. Blanch in boiling water for 2-3 minutes, then set aside.
