Ingredients

1 lb ground beef

2 cups cooked rice

1 cup canned black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

1 can (10 oz) diced tomatoes with green chilies

1 packet (1 oz) taco seasoning

1 cup diced bell peppers (any color)

1 small onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 tablespoon olive oil

Instructions

1. Heat olive oil in a large skillet over medium heat. Sauté the chopped onion and minced garlic until soft and fragrant.

2. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.

3. Stir in bell peppers, corn, and black beans. Cook for 5 minutes until veggies are tender.

4. Mix in taco seasoning and diced tomatoes with green chilies. Simmer for a few minutes to combine flavors.

5. Add cooked rice and stir to evenly combine all ingredients.

6. Sprinkle shredded cheese over the skillet, cover, and let it melt.

7. Serve hot with toppings like cilantro, cherry tomatoes, or avocado.

Notes

For a lighter option, use ground turkey instead of beef.

This dish freezes well—store in freezer-safe containers for up to 3 months.
