Ingredients
For the Cake:
1 cup mashed cooked sweet potato (about 1 medium sweet potato)
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
2 large eggs
1/2 cup sour cream
1 tsp vanilla extract
For the Cinnamon Swirl:
1/3 cup brown sugar
1 tbsp cinnamon
2 tbsp melted butter
For the Glaze:
1 cup powdered sugar
1–2 tbsp milk
1/2 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
- Whisk flour, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium bowl.
- In a large bowl, beat butter, granulated sugar, and brown sugar until fluffy. Add eggs one at a time. Mix in sour cream, vanilla, and mashed sweet potato.
- Add dry ingredients to the wet mixture. Stir just until combined.
- Pour half the batter into the pan. Mix swirl ingredients and drizzle half over the batter. Repeat with the remaining batter and swirl. Marble gently with a knife.
- Bake 35–40 minutes, until a toothpick comes out clean.
- Cool 10 minutes, then transfer to a rack.
- Mix glaze ingredients and drizzle over warm cake.
