Ingredients

1 1/2 cups mashed sweet potato

1 cup cottage cheese

2 large eggs

1/4 cup brown sugar

3/4 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

1/3 cup chopped walnuts

1/2 cup powdered sugar

1 tablespoon milk


Instructions

1. Preheat the oven to 350°F and grease an 8-inch square baking dish.

2. In a large bowl, whisk together the mashed sweet potato, cottage cheese, eggs, maple syrup, brown sugar, melted butter, and vanilla until smooth.

3. In a separate bowl, stir together the flour, baking powder, cinnamon, nutmeg, and salt.

4. Add the dry ingredients to the wet ingredients and mix just until combined.

5. Spread the batter into the prepared baking dish and smooth the top.

6. Sprinkle the chopped walnuts evenly over the batter.

7. Bake for 35 to 40 minutes, or until the center is set and a toothpick comes out mostly clean.

8. Let the cobbler cool for 10 minutes.

9. Stir together the powdered sugar and milk until smooth, then drizzle over the warm cobbler.

Notes

Use well-mashed sweet potato so the batter stays smooth and bakes evenly.

Do not overmix once the flour goes in or the cobbler can turn dense instead of tender.
