Ingredients
2 packs ramen noodles
2 large eggs
2 cloves garlic, minced
3 tablespoons soy sauce
1 tablespoon brown sugar
1 teaspoon chili flakes or 1 tablespoon sriracha
1 teaspoon sesame oil
1 teaspoon toasted sesame seeds (optional)
2 tablespoons water or reserved noodle water
Instructions
1. Boil ramen noodles according to package instructions, drain, and set aside. Reserve some cooking water.
2. In a pan, scramble the eggs in a bit of oil until just set. Remove and keep warm.
3. Sauté minced garlic in the same pan for 30 seconds until fragrant.
4. Stir in soy sauce, brown sugar, chili flakes or sriracha, and water. Let simmer slightly.
5. Add noodles and scrambled eggs to the pan, toss to coat evenly.
6. Finish with a drizzle of sesame oil and sprinkle sesame seeds on top.
7. Serve hot and enjoy immediately.
Notes
For added veggies, toss in shredded carrots or baby spinach with the garlic.
