Ingredients

1 lb ground beef

1/2 cup chopped onion

2 cloves garlic, minced

1 packet taco seasoning

1/4 cup water

1 cup shredded cheese

12 corn tortillas

Oil for frying

Instructions

1. In a skillet over medium-high heat, brown the ground beef until fully cooked.

2. Add chopped onion and minced garlic, cooking until softened.

3. Stir in taco seasoning and 1/4 cup water. Simmer for 2-3 minutes.

4. Mix in shredded cheese until melted and remove from heat.

5. Warm the corn tortillas in a damp paper towel in the microwave for 30 seconds.

6. Spoon about 2 tablespoons of beef filling into each tortilla and roll tightly.

7. Secure with toothpicks if needed.

8. Heat 1/2 inch of oil in a skillet. Fry tacos seam-side down until golden and crispy on both sides.

9. Drain on paper towels and serve hot with toppings of choice.

Notes

To reheat and retain crispiness, use an air fryer or oven instead of the microwave.

For a twist, try adding mashed potatoes or refried beans to the beef filling.
