Ingredients

1 box yellow cake mix

3 large eggs

1 cup pineapple juice (fresh or canned)

1/2 cup vegetable oil

1/2 cup granulated sugar

1/4 cup unsalted butter (melted)

1 tsp vanilla extract

1 cup powdered sugar (for dusting)

1 cup pineapple chunks (fresh or canned, well-drained)

Optional: 1 tbsp lemon juice (for added brightness in glaze)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a bundt or round cake pan.
  2. In a bowl, mix cake mix, eggs, pineapple juice, and oil until smooth (about 2 minutes).
  3. Pour batter into the prepared pan and bake for 35–40 minutes or until a toothpick comes out clean.
  4. In a saucepan, combine sugar, melted butter, and remaining pineapple juice. Stir over medium heat until smooth. Add vanilla and lemon juice.
