Ingredients

2 pounds boneless skinless chicken breasts

1 tablespoon olive oil

3/4 cup chicken broth

2 tablespoons tomato paste

2 tablespoons fresh lime juice

3 cloves garlic, minced

1 tablespoon chili powder

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon onion powder

1/2 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

1/4 cup red onion, finely diced

2 tablespoons fresh cilantro, chopped

1 lime, cut into wedges


Instructions

1. In a medium bowl, whisk together the olive oil, chicken broth, tomato paste, lime juice, minced garlic, chili powder, cumin, smoked paprika, onion powder, oregano, salt, and black pepper.

2. Place the chicken breasts in the Instant Pot in a single even layer.

3. Pour the seasoned liquid over the chicken, making sure the pieces are well coated.

4. Lock the lid and set the valve to sealing.

5. Cook on high pressure for 12 minutes.

6. Let the pressure release naturally for 10 minutes, then carefully release the remaining pressure.

7. Transfer the chicken to a plate or shallow bowl and shred it with two forks.

8. Return the shredded chicken to the Instant Pot and toss it with the cooking juices until fully coated.

9. Stir in the chopped cilantro and top with diced red onion.

10. Serve warm in tortillas with lime wedges and your favorite taco toppings.

Notes

Use chicken thighs instead of breasts if you want even richer, juicier shredded chicken.

Do not skip mixing the shredded chicken back into the cooking liquid, because that is what keeps it moist and flavorful.
