Ingredients
340g fresh green beans
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon lemon zest
3 tablespoons sliced almonds
0.5 teaspoon salt
0.25 teaspoon black pepper
1 tablespoon chopped fresh parsley
Instructions
1. Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until just tender. Drain and transfer to an ice bath.
2. In a dry skillet over medium heat, toast the sliced almonds for 2-3 minutes until golden. Remove and set aside.
3. Heat olive oil in a large skillet. Add garlic and sauté for 1 minute until fragrant.
4. Add the drained green beans to the skillet and toss well to coat in the garlic oil. Cook for 3-4 minutes until heated through.
5. Remove from heat and sprinkle lemon zest, almonds, salt, pepper, and parsley. Toss gently and serve warm.
