1 large head of cauliflower, cut into florets
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk, warmed
1 teaspoon Dijon mustard (optional)

1 1/2 cups shredded sharp cheddar cheese, plus more for topping
1/2 cup grated Parmesan cheese

Instructions
- Bring a large pot of salted water to boil. Add cauliflower and cook for 5-6 minutes until tender. Drain and set aside.
