Ingredients

1 lb shrimp, peeled and deveined

1/2 lb white fish (like cod or halibut), cut into chunks

4 slices bacon, chopped

1 cup corn kernels (fresh or frozen)

1 can (10 oz) diced tomatoes with green chilies

1 cup heavy cream

1/2 cup shredded cheddar cheese

1/2 cup shredded Monterey Jack cheese

1 small onion, diced

3 cloves garlic, minced

1 tsp chili powder

1/2 tsp smoked paprika

1 tbsp lime juice

Salt to taste

Chopped parsley, for garnish

Sour cream and extra cheese, for topping (optional)


Instructions

1. Cook chopped bacon in a large pot until crispy. Set aside and reserve 1-2 tablespoons of bacon fat.

2. Sauté diced onion and garlic in the bacon fat until softened.

3. Stir in tomatoes with green chilies, corn, chili powder, paprika, and a pinch of salt. Simmer for 5 minutes.

4. Add shrimp and white fish. Cook until just done, about 4-5 minutes.

5. Reduce heat and stir in heavy cream. Add cheeses and stir until fully melted and creamy.

6. Stir in lime juice and half the bacon. Adjust salt if needed.

7. Serve hot, garnished with remaining bacon, sour cream, cheese, and parsley.

Notes

Do not overcook the seafood—shrimp and fish should be tender, not rubbery.

For extra heat, add a diced jalapeño when sautéing the aromatics.
