A creamy and zesty Rotel Chicken Salad Dip that’s perfect for parties, game nights, or quick snacks. Packed with shredded chicken, Rotel tomatoes, cream cheese, and spices, this easy dip is flavorful and crowd-pleasing. Serve it warm or cold with chips, crackers, or veggies!


Ingredients

2 cups shredded cooked chicken (rotisserie, canned, or homemade)

1 can (10 oz) Rotel tomatoes, drained

8 oz cream cheese, softened

½ cup mayonnaise

1 cup shredded cheddar cheese

¼ cup finely diced red onion

½ teaspoon garlic powder

1 tablespoon lime juice

¼ teaspoon salt (adjust to taste)

¼ teaspoon black pepper

2 tablespoons chopped cilantro or parsley (for garnish)


Instructions

  1. Prepare the Chicken – Shred cooked chicken into small pieces using two forks. If using canned chicken, drain and shred.
  2. Mix the Base – In a bowl, combine softened cream cheese, mayonnaise, and lime juice. Stir until smooth.
  3. Add Ingredients – Stir in the drained Rotel tomatoes, shredded cheddar cheese, diced red onion, garlic powder, salt, and pepper. Mix well.
  4. Fold in Chicken – Add the shredded chicken and gently mix until well incorporated.
  5. Chill or Heat – For a cold dip, refrigerate for at least 30 minutes. For a warm dip, bake at 350°F for 15–20 minutes until bubbly.
