Ingredients
1 1/2 cups espresso or strong coffee, cooled
24 ladyfingers (Savoiardi)
3 large egg yolks
1/2 cup granulated sugar
8 ounces mascarpone cheese
1 cup heavy cream
2 tablespoons coffee liqueur (optional)
2 tablespoons unsweetened cocoa powder
Instructions
1. Brew espresso or strong coffee and let it cool. Add coffee liqueur if using.
2. In a heatproof bowl over simmering water, whisk egg yolks with sugar until pale and thick. Cool slightly.
3. Fold mascarpone into egg yolk mixture until smooth.
4. Whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
5. Dip ladyfingers quickly in espresso and layer them in a dish. Spread half the mascarpone cream over.
6. Repeat with another layer of dipped ladyfingers and remaining cream.
7. Cover and chill for at least 6 hours, preferably overnight.
8. Dust generously with cocoa powder before serving.
Notes
Make sure your espresso is cooled before dipping ladyfingers to prevent sogginess.
For best flavor, chill overnight to allow layers to fully develop.
