Ingredients
4 cups cooked spinach (fresh or frozen, drained)
3 tablespoons butter
2 tablespoons all-purpose flour
1 1/2 cups milk
1 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
1/4 cup finely chopped onion
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup breadcrumbs
Instructions
1. Thaw and drain spinach (or sautée fresh until wilted), then set aside.
2. In a saucepan, melt butter and cook chopped onion until soft.
3. Stir in flour to create a roux, then slowly whisk in milk.
4. Let simmer until thickened, then add cheddar, Parmesan, garlic powder, salt, and pepper.
5. Stir until cheese melts into a smooth sauce.
6. Combine spinach and cheese sauce in a bowl until well mixed.
