Ingredients

12 oz egg noodles

2 cans (5 oz each) tuna, drained

1 can (10.5 oz) cream of mushroom soup

1 cup frozen peas and carrots

1/2 cup diced onion

1 cup shredded cheddar cheese

3/4 cup sour cream or Greek yogurt

1 cup crushed potato chips or breadcrumbs

1/2 tsp salt

1/4 tsp black pepper

Instructions

1. Cook the egg noodles according to package directions. Drain and set aside.

2. In a skillet, sauté the diced onion until soft and translucent.

3. In a large bowl, mix noodles, sautéed onion, tuna, frozen vegetables, cream of mushroom soup, sour cream, cheddar cheese, salt, and pepper.

4. Pour the mixture into a greased baking dish.

5. Top with crushed potato chips or breadcrumbs.

6. Bake at 375°F (190°C) for 25–30 minutes, until the top is golden and casserole is bubbly.

7. Let rest for 5–10 minutes before serving.

Notes

Make sure noodles are cooked al dente to avoid mushiness when baked.

You can swap in cream of celery or cheddar soup for a twist on the flavor.
