Ingredients

1 cup red lentils, rinsed

1 medium onion, chopped

1 medium carrot, chopped

1 medium potato, chopped

2 tablespoons olive oil

1 tablespoon tomato paste

1 teaspoon ground cumin

½ teaspoon paprika

Salt and pepper to taste

6 cups vegetable broth or water

Juice of half a lemon (optional but recommended)

Fresh parsley for garnish (optional)

Cracked black pepper (optional)


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onions and sauté for 3-4 minutes until translucent.
  3. Stir in chopped carrot and potato; cook another 3-4 minutes.
  4. Add tomato paste, let it caramelize slightly, then mix with the vegetables.
  5. Sprinkle in cumin, paprika, salt, and pepper. Stir well.
  6. Add rinsed lentils and broth. Stir to combine.
  7. Bring to a boil, then reduce heat and simmer uncovered for 25-30 minutes until everything is soft.
  8. Use an immersion blender (or transfer to a blender in batches) to puree the soup until smooth.
  9. Stir in lemon juice, taste, and adjust seasoning.
  10. Serve hot, garnished with fresh parsley and black pepper.
