Ingredients

1 tablespoon olive oil

1.5 pounds ground beef

1 large onion, diced

3 cloves garlic, minced

1 bell pepper, chopped

2 tablespoons tomato paste

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1.5 teaspoons salt

0.5 teaspoon black pepper

1 can (28 ounces) crushed tomatoes

1 can (15 ounces) kidney beans, drained and rinsed

1 can (15 ounces) black beans, drained and rinsed

1 cup beef broth

Optional: 1 diced jalapeño or 1 tablespoon chipotle peppers in adobo


Instructions

1. Heat olive oil in a Dutch oven over medium-high heat. Add ground beef and cook until browned. Drain excess fat if needed.

2. Add onion, garlic, and bell pepper. Cook for 5–7 minutes until soft and fragrant.

3. Stir in tomato paste, chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 2 minutes.

4. Add crushed tomatoes, kidney beans, black beans, and beef broth. Stir to combine.

5. Bring mixture to a boil, then reduce to low. Cover partially and simmer for 30–45 minutes.

6. Taste and adjust seasoning. Serve hot with toppings like cheese, sour cream, or jalapeños.

Notes

Let the chili rest for 10 minutes after cooking to thicken naturally.

Make a double batch and freeze half for future easy dinners.
