Description

Each bite offers juicy buffalo-glazed chicken paired with velvety Alfredo pasta — a true game changer for weeknight cooking or a special dinner treat.


Ingredients

1.5 lbs chicken breasts, cut into bite-sized pieces

1 cup buffalo sauce

1 teaspoon garlic powder

2 cloves garlic, minced

2 tablespoons butter

12 oz rotini pasta

1.5 cups heavy cream

1 cup Parmesan cheese, freshly grated

4 oz cream cheese

1 tablespoon Cajun seasoning

1 tablespoon ranch seasoning

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Season diced chicken with garlic powder, salt, pepper, and Cajun seasoning.

2. Heat olive oil in a skillet and sear chicken until cooked through and golden. Set aside.

3. In the same skillet, melt butter and sauté garlic until fragrant. Add buffalo sauce and a splash of cream. Simmer.

4. Return chicken to pan and coat in the buffalo garlic mixture. Remove from heat.

5. Cook pasta according to package directions. Reserve 1/2 cup of pasta water and drain.

6. In a clean pan, melt butter and cream cheese. Add heavy cream, ranch seasoning, Cajun seasoning, and Parmesan. Stir to thicken.

7. Add reserved pasta water if needed for creaminess.

8. Mix pasta into the Alfredo sauce. Top with buffalo chicken and garnish with parsley or more cheese.

Notes

For extra kick, add crushed red pepper or hot sauce to the Alfredo.

You can substitute rotini with fusilli, penne, or cavatappi.
