Ingredients
2 large chicken breasts, boneless & skinless
2 tablespoons Cajun seasoning
Salt & pepper to taste
2 tablespoons olive oil or butter
3 cups cooked penne pasta
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese (optional)
1 cup heavy cream
1/2 cup whole milk
1/4 cup ranch dressing (or ranch seasoning mix)
3 cloves garlic, minced
1 teaspoon onion powder
Fresh parsley or green onions, chopped (for garnish)
Crushed red pepper flakes (optional)
Instructions
- Slice chicken breasts into strips or cubes. Season with Cajun seasoning, salt, and pepper.
- In a skillet over medium-high heat, cook chicken in olive oil or butter until golden and fully cooked. Remove and set aside.
- Cook penne pasta according to package directions. Drain and reserve 1/2 cup pasta water.
- In the same skillet, sauté garlic for 1 minute. Add heavy cream, milk, ranch, onion powder, and extra Cajun seasoning if desired. Simmer for 3-4 minutes.
- Stir in mozzarella and Parmesan until melted into a smooth sauce. Use pasta water to adjust thickness if needed.
- Add cooked pasta and chicken back into the skillet. Toss to combine and heat through.
