Ingredients

2 boneless, skinless chicken breasts

8 oz spaghetti

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup heavy cream

2 cloves garlic, minced

1 tbsp olive oil

1 cup chicken broth

1/4 cup grated Parmesan cheese

1 tsp dried thyme

Salt and pepper to taste

Fresh parsley for garnish


Instructions

  1. Cook spaghetti in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season chicken with salt and pepper, then cook for 6-8 minutes per side until golden brown and cooked through. Remove chicken from skillet and set aside.
  3. In the same skillet, sauté garlic for about 1 minute until fragrant. Add chicken broth and heavy cream. Bring to a simmer.
  4. Gradually stir in cheddar, mozzarella, and Parmesan cheeses, cooking until the cheese melts and the sauce is smooth.
  5. Cut chicken into bite-sized pieces and add to the sauce. Add cooked pasta and toss to combine. If sauce is too thick, add some reserved pasta water to thin it out.
  6. Garnish with fresh parsley and serve immediately.
