Ingredients
2 large chicken breasts, cubed
12 oz rigatoni pasta
5 cloves garlic, minced
4 tablespoons unsalted butter
1 cup heavy cream
3/4 cup grated Parmesan cheese
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley (optional)
Instructions
1. Bring a large pot of salted water to a boil and cook rigatoni until al dente. Reserve 1/2 cup of pasta water and drain.
2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, and Italian seasoning.
3. Sear the chicken until golden and cooked through, about 6–8 minutes. Remove and set aside.
4. In the same skillet, add butter and garlic. Sauté for 1 minute until fragrant.
5. Stir in heavy cream and simmer for 2–3 minutes until slightly thickened.
6. Add Parmesan cheese and stir until melted and smooth. Use pasta water to adjust consistency if needed.
7. Return chicken and pasta to the skillet. Toss to coat everything in the sauce.
8. Garnish with parsley and additional Parmesan before serving.
