Ingredients

1 lb ground beef (or ground turkey)

1 tbsp olive oil (if using lean meat)

1 medium onion, diced

3 bell peppers (red, yellow, green), chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1/2 cup tomato sauce

1 tsp Italian seasoning

1/2 tsp paprika

Salt and pepper to taste

1 cup cooked rice (white or brown)

Optional: shredded cheddar or mozzarella for topping

Fresh parsley or basil for garnish


Instructions

  1. In a large skillet over medium heat, add olive oil and sauté diced onion until soft (3-4 minutes). Stir in minced garlic and cook for 30 seconds.
  2. Add ground beef. Break it apart and cook until browned (5-7 minutes). Drain excess fat.
  3. Add bell peppers and cook for 5 minutes until slightly softened.
  4. Stir in diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Simmer for 10 minutes.
  5. Fold in cooked rice and let heat through (3-4 minutes).
  6. Top with cheese if using, garnish with herbs, and serve hot.
