Description

Ingredients

1 pound ground beef

1 cup chopped bell peppers (red, yellow, or orange)

1 small onion, diced

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

1/2 cup uncooked rice

1 1/2 cups beef broth

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons chopped parsley (optional, for garnish)


Instructions

1. Heat a large skillet over medium heat and brown the ground beef until fully cooked. Drain excess fat.

2. Add diced onion and minced garlic. Sauté for 3 minutes until softened.

3. Stir in the chopped bell peppers and Italian seasoning. Cook until slightly tender.

4. Add uncooked rice, diced tomatoes with juices, tomato sauce, salt, and pepper. Stir to combine.

5. Pour in the beef broth. Bring to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, until rice is cooked.

6. Uncover, fluff with a fork, and garnish with chopped parsley before serving.

Notes

Use cauliflower rice instead of regular rice for a lower-carb option.

You can swap ground beef for ground turkey or chicken for a leaner variation.
