Ingredients
1 sheet puff pastry, thawed
2 medium yellow onions, sliced into 1/4-inch rounds
1 cup grated Gruyere cheese
2 tbsp unsalted butter
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp brown sugar
1 tsp salt
Freshly ground black pepper, to taste
Fresh thyme sprigs
Hot honey, for drizzling (store-bought or homemade: honey + chili flakes)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Heat butter and olive oil in a skillet over medium heat. Add onion slices and cook until golden on both sides (about 5-6 minutes per side).
- Add balsamic vinegar, brown sugar, salt, and pepper. Stir and cook for another 1-2 minutes, then remove from heat.
- Place caramelized onion rounds spaced apart on the prepared baking sheet. Sprinkle each with thyme leaves.
- Top each onion with about 2 tbsp of grated Gruyere.
- Cut the puff pastry into squares large enough to cover the onion and cheese mounds. Place one square on top of each, tucking edges slightly.
- Bake for 20-25 minutes until puffed and golden. Rotate tray halfway through baking.
- Let cool for a couple minutes, then carefully flip each tart upside down. Drizzle with hot honey and garnish with extra thyme.
