Ingredients

1 1/2 cups warm water (110°F)

1 packet (2 1/4 tsp) active dry yeast

1 tsp sugar

4 cups all-purpose flour

1 tsp salt

1/4 cup unsalted butter, melted

For boiling:

10 cups water

2/3 cup baking soda

For the filling:

1 1/2 cups shredded cheddar cheese (or mozzarella for extra gooeyness)

For topping:

1 egg, beaten (for egg wash)

Coarse sea salt for sprinkling


Instructions

  1. Combine warm water, sugar, and yeast. Let sit 5 minutes until frothy.
  2. Mix in flour, salt, and melted butter. Knead until smooth, about 6-8 minutes. Let rise 1 hour.
  3. Preheat oven to 450°F (230°C). Divide dough into 1.5-inch pieces. Flatten, add cheese in center, and seal into balls.
  4. Boil water and baking soda. Drop bites in for 30 seconds, then transfer to parchment-lined sheet.
  5. Brush with egg wash, sprinkle salt, and bake 12-15 minutes until golden brown.
