4 slices bacon, chopped

1 tablespoon butter

4 cups chicken broth

2 cups gold potatoes, cubed

1 cup carrots, chopped

2 cups cooked chicken breast or thighs, diced

1 cup heavy cream

2 tablespoons chopped chives (plus extra for topping)

salt and pepper, to taste


Instructions

1. Cook the chopped bacon in a large pot until crispy. Remove and set aside.

2. Add butter to the bacon grease, then sautée onions and garlic until softened.

3. Stir in the flour to create a roux. Slowly whisk in chicken broth and simmer until thickened slightly.

4. Add potatoes, carrots, and chicken. Simmer 20 minutes or until vegetables are fork-tender.

5. Reduce heat and stir in heavy cream. Let soup heat through without boiling.
