Ingredients

  2 lbs ground beef

  1 (29 oz) can kidney beans, drained and rinsed

  1 (29 oz) can pinto beans, drained and rinsed

  2 (14.5 oz) cans diced tomatoes

  1 (15 oz) can tomato sauce

  1 cup diced celery

  1 cup diced green bell pepper

  1 cup diced onion

  1 (10 oz) can diced tomatoes with green chilies

  2 tbsp chili powder

  1½ tsp cumin

  1 tsp garlic powder

  1 tsp salt

  ½ tsp black pepper

  ½ tsp sugar

  1 cup water

  1 (15 oz) can corn, drained (optional)

  Toppings: shredded cheddar cheese, chopped onions, diced jalapeños, sour cream (optional)


Instructions

  • In a large skillet, brown the ground beef over medium heat until no longer pink. Drain excess fat.

  • Transfer the beef to your slow cooker.

  • Add kidney beans, pinto beans, diced tomatoes, tomato sauce, green chilies, celery, bell pepper, and onion.

  • Stir in chili powder, cumin, garlic powder, salt, black pepper, sugar, and water. Mix well.

  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

  • About 30 minutes before serving, stir in corn if using.

  • Taste and adjust seasonings if needed.

  • Serve hot with your favorite toppings.
