Ingredients

2 large chicken breasts, sliced into strips

2 cups uncooked penne pasta

2 tablespoons olive oil

1 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

2 tablespoons butter

2 tablespoons all-purpose flour

1 3/4 cups milk (whole or 2%)

1 cup heavy cream

1 1/2 cups shredded white cheddar cheese

1/4 cup grated Parmesan cheese (optional)

Fresh parsley, chopped (for garnish)

Optional: sun-dried tomato paste or roasted red pepper sauce for topping


Instructions

  1. Cook penne pasta in salted boiling water until al dente. Drain and set aside.
  2. Season chicken with garlic powder, paprika, salt, and pepper.
  3. Heat olive oil in a skillet, cook chicken on both sides until golden and fully cooked. Set aside.
  4. In the same skillet, melt butter and whisk in flour to form a roux.
  5. Gradually add milk and cream while whisking to create a smooth sauce.
  6. Stir in cheddar and Parmesan cheese until melted. Season with salt and pepper.
