Description

Ingredients

12 ounces white chocolate chips

1 teaspoon coconut oil or shortening

3 cups chow mein noodles

1 cup dry roasted peanuts

1/2 teaspoon vanilla extract

2 tablespoons holiday sprinkles


Instructions

1. Line a baking sheet or large tray with parchment paper.

2. Add the white chocolate chips and coconut oil to a microwave-safe bowl.

3. Microwave in 20-second intervals, stirring after each one, until the chocolate is fully melted and smooth.

4. Stir in the vanilla extract.

5. Add the chow mein noodles and dry roasted peanuts to the bowl.

6. Gently fold everything together until the noodles and peanuts are evenly coated.

7. Scoop the mixture into small clusters on the prepared tray.

8. Top each cluster with holiday sprinkles before the coating sets.

9. Let the haystacks sit at room temperature or chill in the refrigerator for 20 to 30 minutes until firm.

Notes

Use low heat and stir often when melting white chocolate because it can scorch faster than regular chocolate.
