Ingredients

3 large eggs

1/2 cup granulated sugar

1/2 cup all-purpose flour

1/4 cup cocoa powder

1/4 teaspoon salt

6 ounces white chocolate, chopped

1 cup heavy cream (for mousse)

2 tablespoons powdered sugar

1/2 teaspoon vanilla extract

3/4 cup fresh raspberries

4 ounces white chocolate (for ganache)

1/3 cup heavy cream (for ganache)


Instructions

1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.

2. In a mixing bowl, beat eggs and sugar until light and fluffy.

3. Sift in flour, cocoa powder, and salt. Gently fold until just combined.

4. Spread the batter into the prepared pan and bake for 10–12 minutes.

5. Turn the cake out onto a towel dusted with powdered sugar and roll it up to cool.

6. Melt white chocolate and allow to cool slightly.

7. Whip cream and powdered sugar to soft peaks. Fold in the cooled white chocolate and vanilla extract.

8. Gently stir in the raspberries.

9. Unroll the cooled cake, spread mousse evenly, and roll it back up. Wrap in plastic and refrigerate 2 hours.

10. Heat cream and pour over chopped white chocolate. Stir to make ganache.

11. Spread ganache over the log and decorate with raspberries and powdered sugar.

Notes

Make sure to roll the cake while warm to avoid cracks.

Chill the mousse before assembling for easier spreading.
